How To Make Tteokbokki

Ingredients

  • 8 oz tteok (soft rice cakes)
  • 1 cup water
  • 1/2 cup gochujang (red pepper paste)
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 onion, thinly sliced
  • 1/2 cup diced vegetables (such as carrots, bell peppers, or mushrooms)
  • 1/2 cup protein (such as cooked chicken, beef, or tofu)
  • 1 green onion, thinly sliced, for serving
  • Sesame seeds, for serving (optional)

Instructions

  1. In a large pot, bring the water to a boil. Add the tteok and cook for 2-3 minutes, or until they are soft and swollen.
  2. In a small mixing bowl, whisk together the gochujang, sugar, soy sauce, rice wine, and sesame oil.
  3. Add the sauce to the pot with the tteok. Stir well to coat the tteok with the sauce.
  4. Add the garlic, onion, vegetables, and protein to the pot. Stir well to combine.
  5. Reduce the heat to medium-low and simmer the tteokbokki for an additional 5-10 minutes, or until the flavors have melded together and the vegetables are tender.
